The surveying of Halal food production and consumption behavior in the 5 Border Provinces at the south of Thailand for upgrading to industrial system is the fundamental work for developing the database of the production, distribution and consumption of food in the particularly area of the 5 border provinces such as Songkhla, Satun, Pattani, Yala and Narathiwat. The unique of this region is the majority of the population are Muslim. This project has the aim for assisting the groups of local people, called agricultural housewife group which are the small food production units distributing in the remote area, to develop their works into the industrial system.
The survey has been done by interviewing the agricultural housewife groups with the questionnaires. The total number of the questionnaire are 99 which are 26 from Songkhla, 14 from Satun, 24 from Pattani, 15 from Yala and 20 from Narathiwat. The results can be concluded that the food products produced in these 5 provinces are classified into 3 principle group; snack, herb drink and health foods, as well as traditional food originated in this local area. The size of the production units is a range of 3 to 106 people in a group. Some of the produces are sold at the production site and the others are bought by the middle-man and then distributed to the markets. Otherwise are exported to the neighbor countries such as Malaysia and Singapore. The problems of the upgrading of the food production units are the limitation of money, management, technology (both in the filed of food processing and packaging) as well as the skill of marketing.
