This invention is the development of a low-cost and small-scale margarine making machine which can produce a good-quality shortenings and margarine at a production capacity of 60 litres
per hour. The raw material used consist of 1 kg.of RBD palm olein, 5 kgs.of RBD palm stearin, 100 grams of emulsifier, 100 cc.of Sodium Chloride solution at 20 Bo, and two tea-spoons of vanilla
powder. The process uses crushed ice mixed with salt to cool the oil instead of refrigeration unit.
The best texture of shortenings and margarine is obtained when the temperature of the oil is 20oC.
The unit processing cost is about 1 Baht per litre.
The pilot machine was installed at Pikul Thong Research Center in Narathiwas province.
The machine can produce acceptable quality shortenings and margarine from RBD palm stearine
and olein. The products are sold to the villagers and bakery shops in Narathiwas province.
